"Míscaros" Cream of Sátão

Ingredients

Míscaro from Dão

Lemn twig

2 Bay leaves

Onion

Garlic

Salt

Pepper

Pebble

Chicken and míscaros' shavings broth

Lemon zest

Cream of smoked paprika

Olive oil

Preparation

1.

Start with a typically Portuguese sauté with onion, garlic and two bay leaves

2.

Let the onion and garlic brown

3.

Add the "míscaros"

4.

Let the "míscaros" dry and season with salt and pepper

5.

Add a previously prepared chicken and "míscaros" shavings broth

6.

Add the seeds and mix

7.

Add broth as the mixture needs it

8.

Mix vigorously and cook for about 5 minutes

9.

Finish with cream of smoked paprika, lemon zest, lemon twig and a drizzle of olive oil
