Sátão Egg Chestnuts

0,5 kg sugar

Preparation

1.

Place the 30 eggs in their shells in a bowl of hot water (so that they don't boil) so that you can separate the yolk from the white, as the jam can't contain any whites.

2.

Bring the sugar. In a saucepan, add the eggs to the sugar and bring to the boil over a low heat, stirring constantly until it comes off the bottom. Put the dough to cool.

3.

Sprinkle a table with flour, roll out the dough, cut it into small pieces and shape them into chestnuts and stick them on a stick one at a time.

4.

In a bowl, beat a whole egg and two egg yolks to brush over the chestnuts.

5.

Finally, put them on the hob in a well-lit fire.
